Here are some of the personal projects I have had the time to work on :-

ColdFusionDocs :-
This  is a Flex version of the documentation for ColdFusion. At the moment, it only serves upto version 8 of ColdFusion, although a newer version is already out and about.  The Project is open source and the code is available here. I have used Cairngorm for writing the code.

Projects at RiaForge :-
DiggCFC – This CFC lets you interact with DIGG and get relevant information programmatically.
XMLtoStruct - This CFC converts XML objects into Coldfusion structures. It also keeps atrack of any attributes of XML elements in the document.
